バターナッツスクワッシュと雲丹のスープ ✾ Butternut Squash & Sea Urchin Soup Warmth. Butternut squash is cooked until smooth and velvety, its flavour naturally sweet and nutty without feeling heavy. Sea urchin rests on top, custard-soft and faintly briny, melting gently into the warmth of the soup. The sweetness of the squash meets the sweetness of the uni, land and sea in a single spoonful. Shiso flowers, the small blossoms of the herb, finish the bowl with a light, clean fragrance.
